Climate Action Week – Spring Chickens Cookery Demo: ‘Cooking for One: Vegetarian Style’.

On Monday 13th October, to mark Climate Awareness Week, the Spring Chickens Older Persons Social Club welcomed Mairead Corcoran who gave a great cookery demonstration – in our usual location of the CnD Community Café.

A wide variety of dishes were created – Spinach, Sweet Potato and Lentil Dahl; Vegetarian Chilli, Spinach and Tomato Tortellini Soup & Spinach and Feta Tart in Filo Pastry.

Whilst showing how the dishes are prepared, Mairead talked about the benefits of vegetarian diet – both for health and for economy. Although some of the dishes and ingredients were new to the participants, Mairead provided taster plates for everyone and everyone enjoyed trying something new. Discussion also raised awareness of sustainability, and how eating vegetarian, even sometimes, could be a big help to the planet. She also pointed out how to vary the dishes, for example making the chilli spice-free and it being a wholesome stew, and how dishes can be enjoyed by those on gluten-free or restricted diets.

Copies of the recipes were given to participants, and after a satisfying taster session, the group hope that Mairead will return again in the spring! Mairead was ably assisted by Ryan and Philip, along with the help of the CnD Cafe staff.
